Easy Cookie Recipes for Kids to Enjoy After School

Chocolate Chip Cookie Recipe for Kids

Every bite has the crunch of chocolate that just melts in your mouth and is a great hit with all kids.

Ingredients:

  • 2 1/4 cups maida
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1/2 cup or 1 stick soft, salted butter
  • 2 large eggs
  • 1 teaspoon table salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 cups chocolate chips

Method:

  • Preheat the oven to 375°. Grease the cookie sheet so that the cookies don’t stick.
  • Mix both sugars till they are well blended and there are no lumps.
  • Mix the soft butter with the sugar in globs.
  • Add the eggs one by one and lightly beat them before stirring them into the sugar and butter.
  • Add the vanilla, salt and baking soda.
  • Add all the flour at once. Avoid mixing the batter too much to avoid forming too much gluten.
  • Add all the chocolate chips and fold them into the batter.
  • Scoop the batter into slightly rounded balls about the size of ping-pong balls onto the baking sheet. Space the balls of dough about 2 inches apart.
  • Bake the cookies for 9 to 11 minutes. They should look puffy, set around the edges and dry to the touch.
  • Let them cool for a few minutes and then transfer the cookies to a rack to finish cooling completely.

Trail Mix Cookies

An amalgam of sweet, savoury, chewy and crunchy, these trail mix oatmeal cookies are perfect no matter what you’re craving.

Ingredients:

  • 2 1/2 cups rolled oats, divided in two
  • 1 1/2 cups maida
  • 1 teaspoon baking powder
  • 3/4 teaspoon fine salt
  • 1 cup or 2 sticks of unsalted butter
  • 3/4 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 /4 cup M&M chocolate candies
  • 1/2 cup coarsely chopped pretzels
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup roasted peanuts roasted nuts
  • 1/3 cup chocolate chips

Method:

  • Heat the oven to 350°F.
  • Grind one cup of the oats to a fine powder and transfer it to a bowl.
  • Add the remaining oats, maida, baking powder and salt and whisk till combined.
  • Put the butter, brown sugar and granulated sugar in a bowl and beat till light and fluffy.
  • Add the eggs one by one beating them thoroughly.  Add the vanilla. 
  • With the mixer on low speed, slowly add the flour mixture and beat until incorporated.
  • Add the M&Ms, pretzels, nuts, cranberries, and chocolate chips and mix until evenly distributed. Scoop 2 tablespoon mounds of dough onto the baking sheets, 2 inches apart.
  • Bake for 9 minutes. Rotate the baking sheets between racks halfway through. Bake till light golden brown.
  • Remove from oven and cool for 3 minutes.

Snickerdoodle Cookies

Beloved classic Snickerdoodles are buttery, soft and dusted with cinnamon sugar and are like little pieces of heaven.

Ingredients:

For the Cookies

  • 3 cups maida
  • 1 cup or 2 sticks of unsalted butter
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup packed dark brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar

  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Method:

  • Heat the oven to 425°F.
  • Melt the butter in a saucepan/microwave and let it cool.
  • Combine the flour, granulated sugar, brown sugar, baking soda, salt, cinnamon and nutmeg in a large bowl.
  • Whisk the cooled butter and eggs together. Add the vanilla.
  • Pour the egg mixture into the flour mixture and stir till a soft dough forms.
  • Place the granulated sugar, cinnamon and nutmeg in a shallow bowl and combine.
  • Make 1 1/2-inch balls with the dough and roll them in the cinnamon sugar.
  • Place them on a baking sheet and flatten slightly.
  • Bake for about 7 minutes. Cool for 5 minutes on tray then transfer to a wire rack and cool completely.

S’mores Bar Cookies

This exotic-looking cookie is a graham cracker with embellishments that you can eat at any time and anywhere.

Ingredients:

For the Crust:

  • Cooking spray
  • 2 2/3 cups graham cracker crumbs
  • 1/3 cup maida
  • 2/3 cup granulated sugar
  • 1 stick unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For the filling:

  • 7 ounces marshmallow cream
  • 1 cup chocolate chips
  • 1 cup mini marshmallows

Method:

  • Heat the oven to 350°F. Grease a baking pan with cooking spray.
  • Use an electric hand mixer to whisk the sugar and butter till light in colour and creamy.
  • Add the vanilla and egg and beat on low speed until incorporated. Add the graham cracker crumbs, flour and salt and beat until combined.
  • Put 1/3 of this mixture in a small bowl. Put the remaining mixture into the prepared pan and spread it evenly.
  • Spread the marshmallow cream evenly over this crust. Sprinkle with chocolate chips, followed by marshmallows and then the reserved crust mixture.
  • Bake until golden brown for 20 to 25 minutes.
  • Cool for at least an hour and cut into bars.

Palmiers

Palmiers look really fancy, but they are one of the simplest and tastiest to make.

INGREDIENTS

  • 1 sheet frozen puff pastry either store-bought or homemade
  • 1/4 cup brown or granulated sugar

Method:

  • Thaw the puff pastry till it’s pliable.
  • Roll out the puff pastry that is 1/8 to 1/4 inches thick.
  • Sprinkle with sugar in an even layer, press the sugar into the dough lightly with a rolling pin.
  • Fold the sides inward so they meet in the middle.
  • Sprinkle with more sugar and lightly press it in.
  • Fold the dough in half.
  • Refrigerate for 30 minutes.
  • Heat the oven to 425°F.
  • Slice the chilled dough into 1-inch wide cookies.
  • Transfer the cookies to a baking sheet a few inches apart and sprinkle the cookies with more sugar.
  • Bake for 18 to 20 minutes, until dark golden and cool.
